Easy 4 Ingredient Potato Soup – Creamy, Hearty & Budget-Friendly

A creamy, cozy, 4 ingredient potato soup made with potatoes, milk, cheese, and green onions for the easiest, heartiest comfort meal.

  • 3 pounds russet potatoes, peeled and chopped
  • 2 cups milk (whole or 2%)
  • 1 cup shredded cheddar cheese
  • Green onions, chopped
  • Garlic powder or garlic salt (optional)
  • Salt and black pepper

Instructions

  1. Place peeled and chopped potatoes in a large pot and cover with water. Boil 15–20 minutes until soft.
  2. Drain most of the water, leaving about 1/2 inch in the pot.
  3. Add milk, garlic powder, salt, and pepper. Mash the potatoes gently.
  4. Simmer 5 minutes on low to thicken.
  5. Stir in shredded cheddar cheese until melted.
  6. Serve topped with extra cheese and chopped green onions.

Notes

For a richer texture, warm the milk before adding. Use an immersion blender for a smoother finish. Yukon Gold potatoes also work well for a naturally buttery flavor.
