Baked Cream Cheese Chicken Taquitos for Dinner

Comforting and family-friendly baked chicken taquitos filled with creamy cream cheese, melted cheese, and mild seasonings. Crispy on the outside, creamy on the inside, and perfect for an easy dinner.

  • 2 cups cooked, shredded chicken
  • 4 oz cream cheese, softened
  • 1 cup shredded Monterey Jack cheese
  • 1 clove garlic, minced
  • 1/2 cup salsa verde
  • 1/2 teaspoon ground cumin
  • Salt, to taste
  • Black pepper, to taste
  • 12 to 14 small flour or corn tortillas
  • Cooking spray or olive oil

Instructions

  1. Preheat oven to 425ยฐF.
  2. In a large bowl, mix shredded chicken, softened cream cheese, Monterey Jack cheese, garlic, salsa verde, cumin, salt, and black pepper until well combined.
  3. Warm tortillas slightly to make them flexible.
  4. Spoon 2 to 3 tablespoons of filling onto one edge of each tortilla.
  5. Roll tortillas tightly and place seam-side down on a lined baking sheet.
  6. Lightly spray or brush taquitos with oil.
  7. Bake for 15 to 20 minutes until golden and lightly crispy.
  8. Remove from oven and let cool for a few minutes before serving.

Notes

Do not overfill tortillas. Keep seam-side down while baking and spray lightly with oil for best crispiness.
