Better-than-takeout Chinese beef and broccoli delivers tender beef, crisp broccoli, and a glossy savory sauce that comes together fast in one pan for an easy homemade dinner.

  • 1 pound flank steak or sirloin, thinly sliced against the grain
  • 4 cups broccoli florets
  • 2 tablespoons olive oil or neutral cooking oil
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup water or beef broth
  • 1/4 cup packed brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon fresh grated ginger or 1/2 teaspoon ground ginger
  • 2 teaspoons cornstarch
  • 1 teaspoon sesame oil

Instructions

  1. Slice the beef very thinly against the grain and set aside.
  2. In a small bowl, whisk together soy sauce, water or broth, brown sugar, garlic, ginger, cornstarch, and sesame oil until smooth.
  3. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  4. Add the beef in a single layer and cook until just browned, then remove and set aside.
  5. Add the remaining oil to the skillet.
  6. Add the broccoli and cook until bright green and crisp-tender.
  7. Pour the sauce into the skillet and stir constantly until thickened.
  8. Return the beef to the skillet and toss to coat evenly.
  9. Cook briefly until heated through, then remove from heat and serve immediately.

Notes

Slice beef thinly and cook quickly over high heat for the most tender texture. Stir sauce before adding since cornstarch settles.
