  • 2 tablespoons olive oil
  • 12 ounces linguine
  • 1/2 cup reserved pasta water
  • 6 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon-style mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon dried parsley or 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the linguine until al dente.
  2. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.
  3. Toss the chicken with salt, black pepper, paprika, and garlic powder until evenly coated.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Add the chicken and cook until golden brown and cooked through, then remove and set aside.
  6. Reduce heat to medium and melt the butter in the same skillet.
  7. Add the minced garlic and cook briefly until fragrant.
  8. Stir in Dijon-style mustard, lemon juice, parsley, onion powder, and red pepper flakes if using.
  9. Let the sauce simmer gently for 1 to 2 minutes.
  10. Return the chicken to the skillet.
  11. Add the cooked linguine and toss to combine.
  12. Add reserved pasta water gradually until the sauce coats the pasta smoothly.
  13. Taste and adjust seasoning, then serve immediately.

Notes

Add pasta water gradually to create a silky sauce and avoid overcooking the chicken to keep it tender and juicy.
