A lighter, wholesome version of the classic Chinese takeout favorite featuring tender chicken, crisp broccoli, and a glossy, flavorful brown sauce made with simple pantry ingredients.

Ingredients

Scale
  • 12 oz chicken breast, thinly sliced
  • 1 tbsp cornstarch
  • 1 tbsp oyster sauce
  • 2 tbsp water
  • 1 tsp neutral oil
  • 4 cups broccoli florets
  • 2 tbsp neutral oil (divided)
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1/2 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1/2 cup chicken stock
  • 1 tsp sugar
  • 1/2 tsp sesame oil
  • 1/4 tsp white pepper
  • 1 tbsp cornstarch
  • 1 tbsp water (for slurry)

Instructions

  1. Combine sliced chicken with water, oyster sauce, cornstarch, and oil. Mix and marinate for 10 minutes.
  2. Blanch broccoli in boiling water for 30โ€“45 seconds. Drain and set aside.
  3. Mix soy sauce, dark soy sauce, oyster sauce, chicken stock, sugar, sesame oil, white pepper, cornstarch, and water to create the brown sauce.
  4. Heat 1 tbsp oil in a wok over high heat. Cook chicken until lightly golden and 90% done. Remove and set aside.
  5. Add remaining oil and garlic to the pan. Stir briefly, then pour in the sauce and simmer until thickened.
  6. Return chicken and broccoli to the pan and toss to coat evenly. Remove from heat and serve.

Notes

Keep the heat high for proper stir frying, avoid overcooking the broccoli, and prepare all ingredients beforehand for best results.
