Ultimate Chocolate Peanut Butter Cake Roulade Delight

A rich chocolate sponge cake rolled with fluffy peanut butter cream, finished with smooth chocolate ganache and peanut butter cups for an indulgent, bakery-style dessert.

  • 4 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 2 tablespoons brewed coffee or hot water
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 cup all-purpose flour
  • Powdered sugar, for rolling
  • 8 ounces cream cheese, softened
  • 3/4 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold
  • 3/4 cup chopped peanut butter cups
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream
  • Extra chopped peanut butter cups, for garnish

Instructions

  1. Preheat oven to 350ยฐF and line a 10 x 15-inch jelly roll pan with parchment paper.
  2. Beat eggs on high speed until thick and pale, then gradually add sugar.
  3. Mix in coffee and vanilla extract.
  4. Whisk cocoa powder, salt, baking powder, and flour in a separate bowl.
  5. Gently fold dry ingredients into egg mixture until just combined.
  6. Spread batter evenly into prepared pan.
  7. Bake for 12 to 15 minutes until cake springs back lightly.
  8. Turn hot cake onto a powdered sugar-dusted towel and remove parchment.
  9. Roll cake with towel from short end and let cool completely.
  10. Beat cream cheese and peanut butter until smooth.
  11. Add powdered sugar and vanilla and mix until creamy.
  12. Whip heavy cream to stiff peaks and fold into peanut butter mixture.
  13. Stir in chopped peanut butter cups.
  14. Unroll cooled cake and spread filling evenly.
  15. Re-roll cake without towel and chill for 30 minutes.
  16. Heat heavy cream and pour over chocolate chips.
  17. Stir until smooth to make ganache.
  18. Pour ganache over chilled cake and garnish with peanut butter cups.
  19. Chill until set before slicing and serving.

Notes

Roll the cake while warm to prevent cracking and chill before adding ganache for the cleanest presentation.
