Cinnamon Rolls with Vanilla Bean Icing Made Easy

These cinnamon rolls with vanilla bean icing are soft, fluffy, and filled with warm cinnamon sugar, then topped with a rich, fragrant vanilla bean icing. An easy, bakery-style recipe perfect for weekends, holidays, and cozy mornings at home.

  • 3 1/2 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 3/4 cup whole milk, warmed
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1 1/2 cups powdered sugar
  • 2 tablespoons unsalted butter, melted
  • 2 to 3 tablespoons milk
  • 1 vanilla bean, scraped, or 1 teaspoon vanilla bean paste

Instructions

  1. In a large bowl, combine warm milk and granulated sugar.
  2. Sprinkle the yeast over the milk and let sit for 5 to 7 minutes until foamy.
  3. Add melted butter, egg, salt, and 2 cups of flour to the yeast mixture and stir until combined.
  4. Gradually add the remaining flour until a soft dough forms.
  5. Turn the dough onto a lightly floured surface and knead for 6 to 8 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover, and let rise for 1 to 1 1/2 hours until doubled in size.
  7. Mix brown sugar and cinnamon together in a small bowl.
  8. Roll the dough into a 14 by 9 inch rectangle.
  9. Spread softened butter evenly over the dough and sprinkle with cinnamon sugar.
  10. Roll the dough tightly into a log and slice into 12 equal rolls.
  11. Place the rolls in a greased 9 by 13 inch baking dish.
  12. Cover and let rise for 30 to 45 minutes until puffy.
  13. Preheat the oven to 350ยฐF.
  14. Bake for 22 to 26 minutes until lightly golden.
  15. Whisk powdered sugar, melted butter, milk, and vanilla bean seeds until smooth.
  16. Spread icing over warm cinnamon rolls and serve.

Notes

Use warm, not hot, milk to activate the yeast. Ice the rolls while warm so the icing melts into the swirls.
