  • 2 large boneless skinless chicken breasts
  • Salt and black pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 12 ounces mushrooms, sliced
  • 1 small shallot or 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1 to 2 teaspoons balsamic vinegar or lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Slice each chicken breast in half horizontally to create thin cutlets.
  2. Season both sides with salt and black pepper.
  3. Dredge the chicken lightly in flour and shake off excess.
  4. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
  5. Sear the chicken for 3 to 4 minutes per side until golden and cooked through.
  6. Remove the chicken from the skillet and set aside.
  7. Add 1 tablespoon butter to the skillet.
  8. Add the mushrooms and cook until browned and tender.
  9. Stir in the shallot and garlic and cook until fragrant.
  10. Pour in the chicken broth and add balsamic vinegar or lemon juice.
  11. Scrape up browned bits and let the sauce simmer until slightly reduced.
  12. Return the chicken to the skillet.
  13. Add remaining butter and simmer gently until chicken is heated through.
  14. Garnish with fresh parsley and serve immediately.

Notes

Use thin chicken cutlets for quick, even cooking and allow mushrooms to brown fully for the best flavor.
