  • 3 garlic cloves, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup dry orzo pasta
  • 3 cups chicken broth or vegetable broth
  • 1 cup crushed tomatoes or tomato sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach
  • 1/2 to 1 cup shredded Parmesan or mozzarella cheese

Instructions

  1. Heat olive oil or butter in a large skillet. Sautรฉ onion, carrots, and celery until softened.
  2. Add garlic and cook briefly until fragrant.
  3. Add ground turkey and cook until browned, breaking it apart. Season with salt, pepper, and Italian seasoning.
  4. Stir in the dry orzo and toast for 1โ€“2 minutes.
  5. Add broth and crushed tomatoes. Stir and bring to a gentle simmer.
  6. Cook uncovered, stirring occasionally, until orzo is creamy and tender.
  7. Stir in spinach until wilted.
  8. Add cheese and mix until melted and fully incorporated.
  9. Taste and adjust seasoning before serving warm.

Notes

Add broth as needed if the mixture thickens while cooking. Stir occasionally to prevent sticking and ensure creamy orzo.
