Creamy Queso Chicken Enchiladas are a comforting, crowd-pleasing dinner made with tender shredded chicken, soft tortillas, and a rich, silky queso sauce baked until bubbly and irresistible.

Ingredients

  • Cooked chicken, shredded or chopped
  • Taco seasoning
  • Sour cream
  • Shredded cheddar cheese
  • Chopped green chilies
  • Queso-style melting cheese (queso blanco or Velveeta-style)
  • Diced tomatoes with green chilies
  • Large flour tortillas
  • Chopped cilantro or sliced green onions (optional)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. In a large bowl, mix shredded chicken, taco seasoning, sour cream, cheddar cheese, and green chilies until well combined.
  3. In a saucepan over low heat, melt queso-style cheese with diced tomatoes and green chilies, stirring until smooth.
  4. Spoon chicken mixture down the center of each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour queso sauce evenly over the enchiladas.
  6. Bake for 25 to 30 minutes until heated through and bubbly.
  7. Let rest for 5 minutes, then garnish with cilantro or green onions if desired.

Notes

Warm tortillas before rolling to prevent cracking. Keep queso sauce over low heat for the smoothest texture.
