This creamy crockpot marry me chicken is a comforting, crowd-pleasing dinner made with tender slow-cooked chicken in a rich Parmesan cream sauce with sun-dried tomatoes and garlic. Easy to prepare and full of flavor, it is perfect for busy weeknights or family dinners.

  • 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 3/4 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh basil or parsley, chopped (optional)
  • Extra Parmesan cheese, for serving (optional)

Instructions

  1. Pat the chicken breasts dry and season both sides with salt, black pepper, and Italian seasoning.
  2. Place the seasoned chicken in the bottom of the crockpot.
  3. Sprinkle the minced garlic and chopped sun-dried tomatoes evenly over the chicken.
  4. Pour the chicken broth over the chicken.
  5. Cover and cook on low for 4 to 5 hours, until the chicken is cooked through and tender.
  6. About 30 minutes before serving, pour in the heavy cream and stir gently.
  7. Add the Parmesan cheese and red pepper flakes if using.
  8. Cover and continue cooking until the sauce thickens slightly.
  9. Taste and adjust seasoning if needed.
  10. Garnish with fresh herbs and extra Parmesan cheese before serving.

Notes

For best results, cook on low heat and avoid overcooking the chicken. If the sauce is thinner than desired, remove the lid during the last 15 minutes of cooking.
