  • 1 medium onion, diced
  • 1 small head broccoli, cut into florets
  • 2 1/2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 bay leaves
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon English mustard
  • Black pepper, to taste
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • 1 cup milk

Instructions

  1. Heat the oil in a large pot over medium heat and cook the diced onion until soft and translucent.
  2. Add broccoli florets and frozen mixed vegetables and cook until slightly softened.
  3. Stir in the minced garlic and cook until fragrant.
  4. Pour in the vegetable broth and add bay leaves, oregano, English mustard, and black pepper.
  5. Bring to a gentle simmer and cook until vegetables are tender.
  6. In a separate saucepan, melt butter over medium heat and whisk in flour to form a paste.
  7. Slowly whisk in the milk and cook until smooth and thickened.
