Easy Mexican Beef Chile Verde for Dinner

Mexican Beef Chile Verde is a comforting, flavor-packed stew made with tender beef, tangy tomatillos, and mild green chiles, perfect for an easy and satisfying dinner.

  • 2 pounds beef chuck, cut into 1 inch cubes
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1 1/2 pounds tomatillos, husked and rinsed
  • 2 jalapeรฑo peppers, seeds removed
  • 1/2 cup fresh cilantro leaves
  • Juice of 1 lime
  • Warm tortillas or cooked rice, for serving
  • Extra chopped cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Place tomatillos and jalapeรฑos in a pot of water and bring to a gentle boil.
  2. Cook for 8 to 10 minutes until softened, then drain.
  3. Transfer tomatillos and jalapeรฑos to a blender.
  4. Add cilantro and lime juice, then blend until smooth.
  5. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  6. Add beef in batches and brown on all sides.
  7. Remove beef and set aside.
  8. Add chopped onion to the same pot and cook until softened.
  9. Stir in garlic and cook until fragrant.
  10. Add cumin, oregano, salt, and black pepper.
  11. Return beef to the pot.
  12. Pour in green chile sauce and chicken broth.
  13. Bring to a gentle simmer.
  14. Reduce heat, cover, and cook for 1 1/2 to 2 hours until beef is tender.
  15. Taste and adjust seasoning if needed.
  16. Serve hot with tortillas or rice and garnish with cilantro and lime wedges.

Notes

Brown the beef in batches for best flavor and simmer slowly for tender, melt-in-your-mouth results. This dish tastes even better the next day.
