  • 1 cup whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon espresso powder (optional)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 2 tablespoons coconut oil, melted and cooled
  • 2 large eggs
  • 3/4 cup low-fat buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 3/4 cup dark chocolate chips
  • 1 cup mini marshmallows
  • 1/3 cup peppermint baking chips

Instructions

  1. Preheat the oven to 350ยฐF and line a 12-cup muffin pan with liners or lightly grease.
  2. In a large bowl, whisk together all-purpose flour, whole wheat flour, cocoa powder, baking powder, baking soda, salt, and espresso powder if using.
  3. Add granulated sugar, brown sugar, melted butter, melted coconut oil, eggs, buttermilk, vanilla extract, and peppermint extract to the bowl.
  4. Stir gently until just combined, being careful not to overmix.
  5. Fold in the dark chocolate chips.
  6. Divide the batter evenly between muffin cups, filling each about three-quarters full.
  7. Top each muffin with mini marshmallows and peppermint baking chips.
  8. Bake for 18โ€“20 minutes until a toothpick inserted comes out with a few moist crumbs.
  9. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to keep muffins tender. Add marshmallows just before baking so they stay on top and lightly toast. Measure flour carefully for the best texture.
