Easy Valentine’s Red Velvet Whoopie Pies Recipe

  • 1 cup light brown sugar, packed

  • 1 teaspoon vanilla extract
  • 3/4 cup buttermilk
  • Red gel food coloring, as needed
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 to 2 1/2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Whisk flour, cocoa powder, baking powder, and salt together.
  3. Cream butter and brown sugar until light and fluffy.
  4. Add egg and vanilla extract and mix until combined.
  5. Mix in buttermilk and red food coloring until desired color is reached.
  6. Gradually add dry ingredients and mix just until combined.
  7. Transfer batter to a piping bag and pipe heart shapes onto baking sheets.
  8. Bake for 10 to 12 minutes until cookies spring back lightly.
  9. Cool cookies completely on a wire rack.
  10. Beat cream cheese and butter until smooth.
  11. Add vanilla extract and powdered sugar until filling is creamy.
  12. Pipe or spread filling onto one cookie and sandwich with another.
