Garlic Butter Sautéed Green Beans and Mushrooms is a classic, comforting side dish made with crisp-tender green beans, savory mushrooms, and rich garlic butter that pairs perfectly with any main course.

  • 1 pound fresh green beans, trimmed
  • 8 ounces mushrooms (button, cremini, or baby bella), sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley or thyme, optional garnish

Instructions

  1. Bring a pot of lightly salted water to a boil and blanch the green beans for 3–4 minutes until bright green and slightly tender.
  2. Drain immediately and rinse with cold water to stop the cooking, then set aside.
  3. Heat olive oil and half of the butter in a large skillet over medium heat.
  4. Add the mushrooms in a single layer and sauté for 5–7 minutes until they release moisture and begin to brown.
  5. Add the minced garlic and cook for about 30 seconds until fragrant.
  6. Add the blanched green beans to the skillet and toss to combine.
  7. Add the remaining butter, salt, and black pepper and sauté for 2–4 minutes until heated through and glossy.
  8. Remove from heat, garnish with fresh herbs if desired, and serve immediately.

Notes

Blanching the green beans helps preserve their bright color and crisp-tender texture. Avoid overcrowding the pan so the mushrooms brown properly.
