Simple Ground Beef Potato Casserole – Comfort Food Classic

A cozy, homestyle ground beef potato casserole made with sliced potatoes, seasoned ground beef, and a creamy, savory sauce—all baked together for the perfect comforting family dinner.

  • 6 medium potatoes, peeled and thinly sliced
  • 1 lb ground beef
  • 2 Tbsp butter or cooking oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme or 1/2 tsp dried
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 2 Tbsp all-purpose flour
  • 1 cup beef broth
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Slice potatoes into thin, even slices.
  3. Heat butter or oil in a skillet. Cook onion 3–4 minutes, then add garlic and thyme.
  4. Add ground beef and cook until browned. Season with salt, pepper, paprika, and oregano. Drain excess fat.
  5. Sprinkle flour over the beef mixture and stir. Cook 1 minute.
  6. Slowly pour in beef broth and milk. Simmer 3–5 minutes until thickened.
  7. Layer half the potatoes in the baking dish. Spread half the beef mixture over them.
  8. Repeat with remaining potatoes and beef.
  9. Cover tightly with foil and bake 45 minutes.
  10. Remove foil, sprinkle with cheddar cheese, and bake 10–15 minutes more.
  11. Let rest 10 minutes before serving. Garnish with parsley if desired.

Notes

Slice potatoes evenly for thorough cooking. Drain excess fat to avoid greasiness. Keep the dish tightly covered during the first bake so the potatoes steam and soften properly.
