Quick and Fresh Ground Turkey Teriyaki Stir Fry

A fast and flavorful ground turkey teriyaki stir fry made with colorful vegetables and a glossy homemade sauce. Fresh, satisfying, and ready in about 20 minutesโ€”perfect for busy weeknights.

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh grated ginger
  • 1 red bell pepper, sliced
  • 1 yellow or orange bell pepper, sliced
  • 2 cups broccoli florets
  • 1 large carrot, sliced thin
  • 3 green onions, chopped
  • Optional pinch of red pepper flakes
  • Salt and pepper to taste
  • 1/3 cup soy sauce or tamari
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons rice vinegar
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water

Instructions

  1. Heat olive oil in a large skillet. Add diced onion and cook until softened.
  2. Stir in garlic and grated ginger until fragrant.
  3. Add bell peppers, broccoli, and carrots. Sautรฉ until crisp-tender.
  4. Push vegetables aside and add ground turkey. Break into small pieces and cook until browned. Season lightly with salt and pepper.
  5. Whisk soy sauce, honey, rice vinegar, garlic, and ginger. Pour into the skillet.
  6. Add cornstarch slurry and stir as the sauce thickens and becomes glossy.
  7. Mix turkey and vegetables together until coated evenly.
  8. Stir in chopped green onions and red pepper flakes if desired.
  9. Taste and adjust seasoning before serving.

Notes

Use fresh ginger and garlic for the brightest flavor. Add more cornstarch slurry if a thicker sauce is desired or a splash of water to thin.
