Healthy Ground Turkey and Zucchini Skillet—Quick & Fresh

A quick and fresh one-pan dinner made with lean ground turkey, tender zucchini, and simple seasonings. This healthy skillet recipe is perfect for busy weeknights and easy meal prep.

  • 1 pound lean ground turkey
  • 2 medium zucchini, sliced or diced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: red pepper flakes
  • Optional: grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook for 3–4 minutes until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add ground turkey and cook, breaking it up, for 6–8 minutes until fully cooked.
  5. Season with salt, black pepper, and Italian seasoning.
  6. Add zucchini and stir to combine.
  7. Cook for 5–7 minutes until zucchini is tender but not mushy.
  8. Add red pepper flakes if using.
  9. Taste and adjust seasoning as needed.
  10. Remove from heat and serve with Parmesan cheese if desired.

Notes

Avoid overcooking the zucchini to prevent excess moisture. This skillet works well for meal prep and reheats beautifully.
