Heart-Shaped Strawberry Shortbread Cookies

Buttery, tender shortbread cookies filled with sweet strawberry jam and finished with a pretty strawberry glaze, perfect for gifting and special occasions.

  • 1 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup strawberry jam
  • 1 cup powdered sugar
  • 2 tablespoons fresh strawberry puree
  • 1 tablespoon unsalted butter, melted
  • 1 to 2 tablespoons milk, as needed

Instructions

  1. Beat butter and granulated sugar together until light and creamy.
  2. Add vanilla extract and mix until combined.
  3. Gradually mix in flour and salt until a soft dough forms.
  4. Roll dough to 1/4-inch thickness and cut into heart shapes.
  5. Place cookies on a parchment-lined baking sheet and chill for 20 minutes.
  6. Preheat oven to 350ยฐF.
  7. Bake cookies for 10 to 12 minutes until edges are lightly golden.
  8. Cool cookies completely on a wire rack.
  9. Whisk powdered sugar, strawberry puree, melted butter, and milk to form a glaze.
  10. Dip half of the cookies into glaze and let set.
  11. Spread strawberry jam on unglazed cookies.
  12. Sandwich with glazed cookies and press gently.

Notes

Chilling the cut dough helps the cookies keep their shape. Use thick strawberry jam for neat sandwich cookies.
