Easy Hearty Bok Choy Chicken Soup is a comforting, nourishing bowl made with tender chicken, fresh bok choy, and a clean, savory broth that feels light yet deeply satisfying.

  • 2 tablespoons olive oil or neutral cooking oil
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated or minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 pound boneless, skinless chicken breasts or thighs
  • 6 cups chicken broth or stock (low sodium preferred)
  • 3 cups fresh bok choy, chopped
  • 12 tablespoons soy sauce or coconut aminos
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté the diced onion for 3–4 minutes until softened.
  2. Add the garlic and ginger and cook for 30 seconds until fragrant.
  3. Stir in the carrots and celery and cook for 3–5 minutes until slightly tender.
  4. Pour in the chicken broth, stir well, and bring to a gentle boil.
  5. Add the chicken and simmer over medium-low heat for 12–15 minutes until fully cooked.
  6. Remove the chicken, shred or dice it, then return it to the pot.
  7. Add the bok choy and soy sauce and simmer for 2–4 minutes until just wilted.
  8. Season with salt and black pepper to taste and serve hot.

Notes

Add the bok choy at the end to keep it vibrant and tender. This soup reheats well and tastes even better the next day.
