Easy Hearty German Potato Soup With Vegetables

This easy, hearty German potato soup is thick, rustic, and comforting, made with tender potatoes, aromatic vegetables, and classic flavors for a cozy and satisfying meal.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 pounds Yukon Gold or russet potatoes, peeled and diced
  • 5 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried marjoram or thyme
  • Salt and black pepper, to taste
  • 1 cup sliced chicken sausage or turkey sausage, optional
  • Fresh parsley or chives, chopped, optional

Instructions

  1. Heat a large pot over medium heat and cook sausage until lightly browned, then remove and set aside.
  2. Add olive oil to the pot and sautรฉ onion, carrots, and celery until softened.
  3. Add garlic and cook until fragrant.
  4. Stir in potatoes, vegetable broth, bay leaf, and marjoram.
  5. Bring to a boil, then reduce to a simmer and cook until potatoes are tender.
  6. Remove bay leaf and mash some of the potatoes to thicken the soup.
  7. Return sausage to the pot if using and season with salt and pepper.
  8. Simmer briefly, then serve garnished with fresh herbs.

Notes

Mash the potatoes gently for a rustic texture and avoid over-blending to keep the soup from becoming gluey.
