Delicious Maple Dijon Chicken Sweet Potato Bowls Recipe

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1/4 cup pure maple syrup
  • 3 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika, optional
  • 2 cups cooked quinoa or brown rice
  • 3 to 4 cups baby spinach or chopped kale
  • 1/3 cup dried cranberries, optional
  • 1/3 cup chopped pecans or walnuts, optional
  • Crumbled goat cheese or feta, optional

Instructions

  1. Whisk maple syrup, Dijon mustard, olive oil, garlic, vinegar or lemon juice, salt, and pepper.
  2. Add chicken to marinade, coat well, and refrigerate for at least 30 minutes.
  3. Preheat oven to 425ยฐF.
  4. Toss sweet potatoes with olive oil, salt, pepper, and smoked paprika.
  5. Roast sweet potatoes for 25 to 30 minutes, flipping halfway, until tender and caramelized.
  6. Heat a skillet over medium heat and lightly oil.
  7. Cook chicken for 6 to 7 minutes per side until internal temperature reaches 165ยฐF.
  8. Let chicken rest for 5 minutes, then slice.
  9. Prepare quinoa or brown rice if not already cooked.
  10. Massage kale with olive oil and salt if using, or prepare spinach as is.
  11. Assemble bowls with grains, greens, sweet potatoes, and sliced chicken.
  12. Top with dried cranberries, nuts, and cheese if desired.
