  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 1 1/2 cups shredded cheese, cheddar or Mexican blend
  • 1/4 tsp salt, or to taste
  • Chopped fresh cilantro (optional)
  • Diced tomatoes (optional)
  • Sliced green onions (optional)

Instructions

  1. Pat the chicken breasts dry and season evenly with chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium heat and cook the chicken for 5 to 6 minutes per side until golden brown and cooked through.
  3. Remove the chicken from the skillet and set aside, keeping warm.
  4. Reduce heat to medium-low, add butter to the skillet, and let it melt.
  5. Whisk in the flour and cook for about 1 minute until smooth and lightly golden.
  6. Slowly whisk in the milk and cook for 2 to 3 minutes until slightly thickened.
  7. Add the shredded cheese a handful at a time, stirring until fully melted and smooth.
  8. Season the cheese sauce with salt to taste.
  9. Return the chicken to the skillet and spoon the cheese sauce over the top.
  10. Let everything warm together for 2 to 3 minutes, then garnish as desired and serve hot.

Notes

Use freshly shredded cheese for the smoothest sauce. Keep heat low when melting cheese to prevent grainy texture. Serve over rice, in tortillas, or with vegetables.
