Easy Mini Sausage Pancake Muffins for Busy Mornings are soft, fluffy, bite-sized breakfast muffins made with pancake batter and savory sausage, perfect for quick breakfasts, meal prep, and on-the-go mornings.

  • 1 lb breakfast sausage, cooked and crumbled
  • 2 cups pancake mix
  • 1 1/3 cups milk
  • 1 large egg
  • Maple syrup, for serving
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 tsp cinnamon (optional)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat the oven to 400ยฐF and lightly grease a mini muffin tin.
  2. Cook the breakfast sausage in a skillet over medium heat until fully browned, then drain and let cool slightly.
  3. In a large bowl, whisk together the pancake mix, milk, and egg until just combined.
  4. Gently fold the cooked sausage into the batter along with any optional add-ins.
  5. Spoon the batter into the prepared mini muffin cups, filling each about three-quarters full.
  6. Bake for 12 to 15 minutes, until lightly golden and a toothpick inserted comes out clean.
  7. Let cool briefly, then remove from the pan and serve warm with maple syrup.

Notes

Grease the muffin tin well to prevent sticking. Do not overmix the batter to keep muffins light and fluffy. Cool completely before storing or freezing.
