Easy One-Pot Creamy Meatball Soup Recipe

A comforting, family-friendly one-pot soup made with tender meatballs, hearty vegetables, and a rich, creamy broth that delivers big flavor with minimal cleanup.

  • 1 pound ground Italian sausage, mild or spicy
  • 1/2 cup finely minced onion
  • 1 tablespoon minced garlic
  • 1 large egg
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1/4 cup diced garlic
  • 8 ounces cremini mushrooms, sliced
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 carrots, sliced
  • 3 celery stalks, sliced
  • 12 ounces beef stock
  • 1 tablespoon Italian seasoning
  • 2 cups heavy whipping cream
  • 1 cup grated Parmesan cheese

Instructions

  1. In a large bowl, gently mix ground pork, Italian sausage, minced onion, garlic, and egg until just combined.
  2. Roll into evenly sized meatballs and refrigerate for 10โ€“15 minutes.
  3. Heat olive oil in a large pot over medium heat and brown meatballs on all sides in batches.
  4. Remove meatballs and set aside.
  5. In the same pot, sautรฉ diced onion and garlic for 2 minutes until fragrant.
  6. Add mushrooms, salt, and black pepper, and cook 4โ€“5 minutes until softened.
  7. Stir in carrots and celery and cook for 3 minutes.
  8. Add beef stock and Italian seasoning, scraping up browned bits.
  9. Return meatballs to the pot and simmer gently for 15 minutes.
  10. Lower heat and slowly stir in heavy cream.
  11. Add Parmesan cheese and stir until melted.
  12. Simmer 5โ€“10 minutes until slightly thickened, then serve hot.

Notes

Use freshly grated Parmesan for best texture and keep the soup at a gentle simmer after adding cream to prevent separation.
