  • 1 small onion or 2 shallots, finely chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • 16 ounces shelf-stable potato gnocchi
  • 2 cups cooked chicken, shredded or diced
  • 1 cup frozen peas

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, carrots, celery, and mushrooms and cook until softened.
  3. Stir in garlic, poultry seasoning, thyme, salt, and black pepper.
  4. Cook until garlic is fragrant.
  5. Sprinkle flour over vegetables and stir to coat.
  6. Cook for 1 minute to remove raw flour taste.
  7. Slowly pour in chicken broth while stirring.
  8. Add milk and stir until slightly thickened.
  9. Bring mixture to a gentle simmer.
  10. Add gnocchi and stir gently.
  11. Cook gnocchi according to package directions until tender.
  12. Stir in cooked chicken and frozen peas.
  13. Cook until heated through.
  14. Taste and adjust seasoning as needed.
  15. Remove from heat and let rest briefly before serving.

Notes

Use cooked or rotisserie chicken for convenience. Stir gently after adding gnocchi to keep them from breaking apart.
