Ingredients

Scale
  • 1.5 pounds flank steak or similar cut
  • 1 to 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 3 to 4 tablespoons grated Parmesan cheese
  • Salt and pepper to taste
  • 2 pounds red potatoes, quartered
  • 1 to 2 tablespoons olive oil
  • 1 to 2 garlic cloves, minced
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 1 pound asparagus, trimmed
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 to 2 tablespoons grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to broil. Toss potatoes with olive oil, garlic, Parmesan, parsley, salt, and pepper. Spread on a sheet pan and broil 6โ€“8 minutes until browning.
  2. Pat steak dry. Brush with olive oil, rub with garlic, season with salt and pepper, and press Parmesan onto the surface.
  3. Push potatoes to one side. Place steak in the center. Toss asparagus with olive oil, garlic, Parmesan, salt, and pepper, then arrange on the pan.
  4. Broil 4โ€“6 minutes per side until steak reaches desired doneness. Rest steak 5โ€“10 minutes before slicing.

Notes

Give potatoes a head start so everything finishes at the same time. Watch closely under the broiler to prevent burning.
