  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 medium yellow onion, finely diced
  • 3 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) Great Northern beans, drained and rinsed
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 cup ditalini pasta
  • 1 tbsp Italian seasoning
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper
  • 1 bay leaf
  • Fresh basil, chopped, for serving
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat a large soup pot or Dutch oven over medium-high heat and add the olive oil.
  2. Add the ground beef and cook until fully browned, breaking it apart as it cooks.
  3. Drain excess grease if needed and return the beef to the pot.
  4. Add the onion, carrots, and celery and cook for about 5 minutes until softened.
  5. Add the garlic and cook for 30 seconds until fragrant.
  6. Stir in the diced tomatoes, tomato sauce, chicken broth, water, Great Northern beans, kidney beans, Italian seasoning, salt, black pepper, and bay leaf.
  7. Bring to a gentle boil, then reduce heat and simmer uncovered for 10 minutes.
  8. Add the ditalini pasta and cook for 8 to 10 minutes, stirring occasionally, until tender.
  9. Remove the bay leaf and adjust seasoning if needed.
  10. Serve hot topped with fresh basil and grated Parmesan cheese.

Notes

Dice vegetables evenly for even cooking. Stir pasta occasionally to prevent sticking. Add extra broth when reheating, as pasta continues to absorb liquid.
