Polish Potato Soup with Dill and Smoked Meat

A hearty, comforting Polish-style potato soup made with tender potatoes, smoky sausage, fresh dill, and a bright touch of dill pickle for balance and depth.

  • 2 tablespoons olive oil
  • 6 ounces smoked sausage or kielbasa, sliced
  • 1 medium yellow onion, chopped
  • 2 celery ribs, sliced
  • 2 carrots, diced
  • 2ยฝ pounds Yukon Gold potatoes, peeled and sliced
  • 4 cups chicken broth
  • 1ยฝ cups water, plus more if needed
  • 1 teaspoon salt, or to taste
  • ยฝ teaspoon black pepper
  • Pinch of cayenne pepper, optional
  • ยพ cup diced dill pickles
  • ยผ cup dill pickle juice
  • ยฝ cup fresh dill, chopped and divided
  • Sour cream, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced smoked sausage and cook until lightly browned.
  3. Add onion, celery, and carrots and sautรฉ until softened.
  4. Stir in potatoes, chicken broth, water, salt, black pepper, and cayenne if using.
  5. Bring to a gentle boil, then reduce heat and simmer uncovered.
  6. Cook until potatoes are very tender.
  7. Add diced dill pickles, pickle juice, and most of the fresh dill.
  8. Simmer briefly to blend flavors.
  9. Gently mash some of the potatoes to thicken the soup.
  10. Taste and adjust seasoning as needed.
  11. Stir in remaining fresh dill.
  12. Serve hot with sour cream if desired.

Notes

Mash only part of the potatoes for the best texture. Add dill near the end to keep the flavor fresh and vibrant.
