Ingredients

Scale
  • 2 pounds boneless skinless chicken breast or thighs, cut into bite-size pieces
  • 3 tablespoons olive oil
  • 2 tablespoons ranch seasoning mix
  • 4 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 3/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley, optional
  • Extra Parmesan for serving, optional

Instructions

  1. Cut the chicken into evenly sized bite-size pieces.
  2. In a large bowl, mix olive oil, ranch seasoning, garlic, black pepper, and salt.
  3. Add the chicken and toss until well coated.
  4. Sprinkle in the Parmesan cheese and toss again until evenly coated.
  5. Let the chicken marinate for at least 20 minutes.
  6. Thread the chicken pieces onto skewers, leaving space between each piece.
  7. Cook on a grill over medium heat, in a 425ยฐF oven, or in an air fryer until the chicken is cooked through.
  8. Remove from heat and garnish with parsley and extra Parmesan if desired.

Notes

Soak wooden skewers before using to prevent burning. Avoid high heat to keep the Parmesan from browning too quickly.
