35-Minute Rotisserie Chicken Broccoli Pasta—High-Protein, No-Fuss Dinner

A fast, comforting, high-protein pasta dinner made with rotisserie chicken, tender broccoli, and a creamy cheese sauce—all ready in just 35 minutes with minimal effort.

  • 1 lb penne pasta
  • 4 cups broccoli florets
  • 4 cups shredded rotisserie chicken
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Boil salted water and cook penne until al dente. In the last 3 minutes, add broccoli. Reserve 1 cup pasta water, then drain.
  2. Heat olive oil and butter in a large skillet. Add diced onion and cook 3–4 minutes until soft, then add garlic for 30 seconds.
  3. Pour in heavy cream and chicken broth. Simmer gently. Add Italian seasoning, garlic powder, pepper, and optional red pepper flakes. Stir in Parmesan and mozzarella until melted.
  4. Add pasta and broccoli to the sauce, then fold in shredded rotisserie chicken. Add pasta water as needed to loosen the sauce.
  5. Season with salt and pepper, let rest 2 minutes, then serve warm.

Notes

Salt pasta water well, grate fresh Parmesan for a smooth sauce, and add pasta water gradually to achieve the perfect creamy consistency.
