  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon soy sauce
  • 1 teaspoon hot sauce, optional
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 0.5 teaspoon mustard powder
  • 0.5 teaspoon black pepper
  • 1.5 pounds red potatoes, diced
  • 1 to 1.5 cups shredded cheddar cheese, optional
  • Salt to taste

Instructions

  1. Heat a large pot over medium heat and brown the sausage, breaking it into crumbles.
  2. Remove sausage and set aside, leaving about one tablespoon of drippings in the pot.
  3. Add butter, onion, carrots, and celery, and cook until softened.
  4. Add garlic and cook briefly until fragrant.
  5. Sprinkle flour over vegetables and stir for 1 to 2 minutes.
  6. Slowly add chicken broth while stirring to avoid lumps.
  7. Stir in heavy cream, soy sauce, hot sauce, basil, parsley, oregano, mustard powder, and black pepper.
  8. Add diced potatoes and bring to a gentle simmer.
  9. Cook until potatoes are fork-tender.
  10. Return sausage to the pot and stir.
  11. Add cheddar cheese if using and stir until melted.
  12. Taste and adjust salt, then serve hot.

Notes

Use evenly diced potatoes for consistent cooking. Mash a few potatoes in the pot for a thicker texture if desired.
