Ingredients

Scale

  • 3 cups water or low-sodium chicken stock
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1 pound medium shrimp, peeled and deveined
  • 1/2 pound ground beef or ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 celery stalk, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 2 green onions, sliced

Instructions

  1. Rinse the rice under cold water until mostly clear.
  2. Combine rice, water or stock, bay leaf, and salt in a saucepan.
  3. Bring to a boil, reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat, discard bay leaf, and fluff rice with a fork.
  5. Pat shrimp dry and season lightly with salt, pepper, and paprika.
  6. Heat olive oil in a large skillet over medium-high heat.
  7. Cook shrimp 1 to 2 minutes per side until pink and opaque.
  8. Remove shrimp from skillet and set aside.
  9. Add ground meat to the same skillet and cook until browned.
  10. Drain excess fat if needed.
  11. Add onion, bell pepper, and celery and cook until softened.
  12. Add garlic and cook until fragrant.
  13. Stir in paprika, thyme, cumin, cayenne, salt, and pepper.
  14. Add cooked rice to the skillet and mix well.
  15. Return shrimp to the pan and gently fold in.
  16. Cook until everything is heated through.
  17. Garnish with sliced green onions and serve hot.

Notes

Cook the shrimp separately to prevent overcooking. Finely chopping the vegetables helps them blend evenly into the rice.
