Easy Slow-Cooked French Onion Pot Roast Recipe

A hearty, comforting French onionโ€“inspired pot roast featuring fall-apart tender beef, deeply caramelized onions, and a rich savory gravy perfect for slow, relaxed cooking.

  • 3 1/2 lb beef chuck roast
  • 4 large yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 1/2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 4 sprigs fresh thyme (or 1 1/2 tsp dried)
  • 1 bay leaf
  • 2 tsp salt
  • 1 tsp black pepper

Instructions

  1. Pat the chuck roast dry and season all sides generously with salt and pepper.
  2. Heat olive oil in a Dutch oven over medium-high heat and sear the beef on all sides until browned. Remove and set aside.
  3. Add butter and sliced onions to the pot and cook 20โ€“25 minutes until deeply caramelized.
  4. Stir in garlic for 30 seconds, then add tomato paste and cook 1 minute.
  5. Pour in beef broth and Worcestershire sauce, scraping up browned bits. Add thyme and bay leaf, then return roast to the pot.
  6. Cover and cook at 325ยฐF (165ยฐC) for 3 1/2โ€“4 hours, or in a slow cooker on low for 7โ€“8 hours.
  7. Remove bay leaf and thyme stems, then shred or slice beef and serve with onion gravy.

Notes

Donโ€™t rush the onion caramelization, always sear the beef for deeper flavor, and skim excess fat from the gravy before serving.
