Hearty Slow Cooker Loaded Potato Soup

A rich, creamy, and comforting slow cooker soup loaded with tender potatoes, melted cheese, and hearty flavors inspired by a classic baked potato.

  • 2ยฝ lb russet potatoes, peeled and diced
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 8 oz cream cheese, softened
  • 1/2 cup shredded sharp cheddar cheese
  • 1 cup heavy cream
  • Optional: cooked bacon bits or turkey bacon
  • Optional: chopped green onions or chives
  • Optional: extra shredded cheddar
  • Optional: sour cream or Greek yogurt

Instructions

  1. Peel and dice the potatoes into evenly sized cubes to ensure even cooking.
  2. Add potatoes, chicken broth, garlic powder, onion powder, salt, and pepper to the slow cooker. Stir lightly.
  3. Cover and cook on LOW for 4โ€“6 hours or HIGH for 2โ€“3 hours, until potatoes are fork-tender.
  4. Mash some of the potatoes with a masher or blend with an immersion blender, leaving chunks if desired.
  5. Stir in softened cream cheese, cheddar cheese, and heavy cream until fully melted and smooth.
  6. Cover and cook on LOW for an additional 15โ€“20 minutes to blend flavors.
  7. Taste and adjust seasoning. Serve with your favorite toppings like bacon, cheddar, or green onions.

Notes

Blend gradually to control thickness. Soften cream cheese before adding to prevent lumps. Add broth or milk when reheating if soup becomes too thick.
