  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream or whole milk
  • 1/4 teaspoon poultry seasoning (optional)

Instructions

  1. Pat the chicken dry and season both sides with salt, pepper, garlic powder, onion powder, and paprika.
  2. Dredge the chicken lightly in flour and shake off the excess.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Sear the chicken for 4 to 5 minutes per side until golden brown, then remove and set aside.
  5. Reduce heat to medium and melt butter in the same skillet.
  6. Add sliced onions and cook until soft and lightly caramelized.
  7. Stir in the garlic and cook for 30 seconds.
  8. Sprinkle flour over the onions and stir continuously for 1 minute.
  9. Slowly pour in the chicken broth while stirring to prevent lumps.
  10. Add cream and poultry seasoning and bring to a gentle simmer.
  11. Return the chicken and juices to the skillet.
  12. Spoon gravy over the chicken and simmer partially covered for 10 to 15 minutes until cooked through.
  13. Taste and adjust seasoning, then serve hot with extra gravy.
