Easy Spicy Southern Chicken Spaghetti Casserole Recipe

A creamy, cheesy Southern-style chicken spaghetti casserole with bold spices, tender chicken, and just the right kick of heat, perfect for comforting family dinners.

  • 12 ounces spaghetti, broken in half
  • 3 cups cooked chicken, shredded or diced
  • 1 can (10 ounces) diced tomatoes with green chilies, lightly drained
  • 1 cup sour cream
  • 1 cup chicken broth
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 small onion, finely diced
  • 1 small green bell pepper, finely diced
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 to 1/2 teaspoon cayenne pepper
  • Salt and black pepper to taste

Instructions

  1. Cook spaghetti in salted water until just al dente and drain well.
  2. Melt butter in a skillet over medium heat.
  3. Add onion and bell pepper and cook until softened.
  4. In a large bowl, stir together sour cream, chicken broth, garlic powder, onion powder, smoked paprika, cayenne, salt, and pepper.
  5. Add cooked spaghetti, chicken, vegetables, and diced tomatoes to the bowl.
  6. Stir until evenly combined.
  7. Fold in 1 1/2 cups cheddar cheese and 1/2 cup pepper jack cheese.
  8. Preheat oven to 350ยฐF and grease a 9 x 13-inch baking dish.
  9. Transfer mixture to baking dish and spread evenly.
  10. Top with remaining cheeses.
  11. Bake uncovered for 30 to 35 minutes until bubbly and lightly golden.
  12. Let rest for 5 to 10 minutes before serving.

Notes

Slightly undercook the pasta and let the casserole rest before serving to help it hold together and stay creamy.
