Fresh Ukrainian Borscht with Potatoes is a comforting, colorful soup made with beets, potatoes, cabbage, and simple seasonings that create a nourishing and hearty bowl perfect for family meals.

  • 3 medium beets, peeled and shredded or finely diced
  • 3 medium Yukon Gold or russet potatoes, peeled and cubed
  • 2 cups shredded green cabbage
  • 1 large carrot, grated
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil or sunflower oil
  • 6 cups vegetable broth or beef broth
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 to 2 tablespoons apple cider vinegar or fresh lemon juice
  • 1 teaspoon sugar, optional
  • Fresh dill or parsley, chopped
  • Sour cream for serving, optional

Instructions

  1. Heat the oil in a large pot over medium heat and cook the onion until soft.
  2. Add the garlic and cook briefly until fragrant.
  3. Stir in the beets and carrot and cook until slightly softened.
  4. Add the tomato paste and cook for 1 to 2 minutes.
  5. Pour in the broth and add the potatoes and bay leaf.
  6. Bring to a boil, then reduce heat and simmer until potatoes are nearly tender.
  7. Add the shredded cabbage and continue simmering until tender.
  8. Season with salt, black pepper, and vinegar or lemon juice.
  9. Taste and add sugar if needed for balance.
  10. Remove bay leaf, rest briefly, and serve with herbs and sour cream if desired.

Notes

Add the acid near the end of cooking to preserve the bright beet color and allow the soup to rest before serving for best flavor.
