  • 1 medium yellow onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 6 medium russet potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Shredded cheddar cheese (optional topping)
  • Chopped green onions or parsley (optional topping)
  • Extra cooked bacon pieces (optional topping)
  • Sour cream (optional topping)

Instructions

  1. Cook diced bacon in a large pot over medium heat until crispy.
  2. Remove bacon and set aside, leaving about 2 tablespoons of fat in the pot.
  3. Add onion, carrots, and celery and cook until softened.
  4. Stir in diced potatoes and pour in chicken broth.
  5. Bring to a gentle boil, then simmer until potatoes are fork-tender.
  6. Whisk flour and milk together until smooth.
  7. Slowly stir milk mixture into the soup and simmer until thickened.
  8. Blend about one-third of the soup for a creamy texture.
  9. Stir in heavy cream and reserved bacon.
  10. Season with salt and pepper to taste.
  11. Heat gently for a few minutes.
  12. Ladle into bowls and add desired toppings.

Notes

Blend only part of the soup to keep it hearty. Add cream at the end for the best texture.
