Easy Vegan Ramen Noodles with Spicy Miso Broth is a cozy, flavor-packed one-pot meal made with savory miso broth, garlic, ginger, chewy noodles, tofu, and vegetables for a comforting vegan dinner.

Ingredients

  • 1 tablespoon neutral oil or sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 to 2 tablespoons chili oil or chili paste
  • 3 tablespoons white or yellow miso paste
  • 2 tablespoons soy sauce or tamari
  • 4 cups vegetable broth or water
  • 2 to 3 packs vegan ramen noodles, seasoning packets discarded
  • 1 1/2 cups sliced mushrooms
  • 7 oz firm tofu, cubed
  • 1 cup spinach, bok choy, or napa cabbage
  • 2 green onions, sliced
  • Sesame seeds, optional
  • Chili crisp or extra chili oil, optional

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add garlic and ginger and cook briefly until fragrant.
  3. Stir in chili oil or chili paste and warm gently.
  4. Lower heat and add miso paste and soy sauce, stirring to dissolve.
  5. Slowly pour in vegetable broth while stirring.
  6. Bring broth to a gentle simmer.
  7. Add mushrooms and tofu and cook until mushrooms soften.
  8. Add ramen noodles and cook until tender.
  9. Stir in greens and cook just until wilted.
  10. Remove from heat and serve hot.

Notes

Do not boil aggressively after adding miso to preserve its flavor and texture.
