Velvety Potato and Leek Soup With Coconut Milk

Velvety Potato and Leek Soup is a comforting, silky, dairy-free soup made with potatoes, leeks, and coconut milk, finished with a squeeze of lime for brightness.

  • 4 large leeks, white and light green parts only, cleaned and chopped
  • 2 medium potatoes (Yukon Gold or russet), peeled and sliced
  • 3 small fresh onions, chopped
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 5 tablespoons olive oil
  • 200 ml coconut milk (about 3/4 cup)
  • 700 ml vegetable broth (or water + vegetable bouillon cube)
  • 1 tablespoon salt (adjust to taste)
  • Pinch of black pepper
  • 1 teaspoon dried basil
  • Fresh thyme, optional for garnish
  • Juice of 1/2 lime

Instructions

  1. Trim the leeks, keeping only the white and pale green sections. Slice lengthwise, rinse thoroughly, then chop. Peel and slice the potatoes. Chop the onions and mince the garlic.
  2. Heat olive oil in a large pot over medium heat. Add the leeks, potatoes, and both onions. Sautรฉ for about 2โ€“3 minutes, stirring gently, until the vegetables begin to soften.
  3. Add the minced garlic and cook for another minute until fragrant. Stir in salt, black pepper, and dried basil so the vegetables absorb the seasoning evenly.
  4. Pour in the vegetable broth (or water with a vegetable bouillon cube). Bring to a gentle simmer and cook for about 15โ€“20 minutes, or until the potatoes are very soft and easily pierced with a fork.
  5. Remove the pot from heat. Using an immersion blender (or a countertop blender in batches), blend the soup until completely smooth and creamy.
  6. Stir in the coconut milk and lime juice. Taste and adjust salt or pepper as needed. Warm gently for a few minutes without boiling.
  7. Serve hot with crusty bread, garlic flatbread, or a drizzle of extra coconut milk and a sprig of fresh thyme or cracked black pepper.

Notes

Clean leeks thoroughly as dirt hides between layers. Blend thoroughly for the smoothest texture. Add coconut milk after blending to control creaminess.
