Easy White Lasagna Soup is a creamy, cozy one-pot dinner that brings all the comforting flavors of classic lasagna into a warm and satisfying soup the whole family will love.

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 pound boneless skinless chicken breast or thighs, diced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cups chicken broth
  • 8 lasagna noodles, broken into bite-size pieces
  • 1 cup heavy cream
  • 1 cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Chopped fresh parsley or basil for garnish, optional

Instructions

  1. Heat the olive oil in a large pot over medium heat and cook the diced onion until softened.
  2. Add the garlic and cook briefly until fragrant.
  3. Stir in the diced chicken, Italian seasoning, salt, and black pepper and cook until the chicken is lightly golden.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Add the broken lasagna noodles and simmer until the noodles are tender.
  6. Lower the heat and stir in the heavy cream and ricotta cheese until smooth.
  7. Add the mozzarella and Parmesan cheese and stir until melted and creamy.
  8. Taste and adjust seasoning as needed.
  9. Ladle into bowls and garnish with fresh parsley or basil if desired.

Notes

Stir the soup occasionally to prevent the noodles from sticking. Keep the heat low after adding dairy to maintain a smooth and creamy texture.
