Easy Gochujang Broccoli is a bold Korean-inspired side dish made with tender broccoli florets tossed in a glossy, spicy-sweet gochujang sauce. Quick to prepare and packed with flavor, it is perfect for busy weeknights, meal prep, or as a standout vegetable side.

Ingredients

Scale
  • 1 1/2 pounds fresh broccoli florets
  • 1 tablespoon neutral oil (avocado or canola oil)
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 2 tablespoons gochujang
  • 1 1/2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 1/2 tablespoons honey or maple syrup
  • 2 tablespoons water or vegetable broth
  • 1 teaspoon toasted sesame oil
  • 1 to 2 teaspoons sesame seeds
  • Sliced green onions
  • Lime wedges (optional)

Instructions

  1. Bring a large pot of salted water to a boil and blanch the broccoli for 2 to 3 minutes until bright green and tender-crisp.
  2. Transfer broccoli to ice water, then drain well and set aside.
  3. In a small bowl, whisk together gochujang, soy sauce, rice vinegar, honey or maple syrup, water or broth, and sesame oil.
  4. Heat a large skillet over medium heat and add the neutral oil.
  5. Add garlic and ginger and cook for about 30 seconds until fragrant.
  6. Add the drained broccoli and toss to coat with the aromatics.
  7. Cook for 2 to 3 minutes until heated through.
  8. Pour in the gochujang sauce and toss until evenly coated.
  9. Cook for 1 to 2 minutes until the sauce thickens and clings to the broccoli.
  10. Remove from heat and garnish with sesame seeds, green onions, and lime if desired.

Notes

Do not overcook the broccoli to keep it tender-crisp. Adjust sweetness or spice based on your gochujang brand. Use maple syrup for a vegan version and tamari for gluten-free.
